Noci’s Secret Lasagna Recipe
Caio! Matteo and Matteo here, we recently rolled up our sleeves at Gloria’s for The Big Lasagna Cook Off, celebrating their 7th birthday the Italian way alongside Senza Fondo, 64 Old Compton Street, Passione Vino, and Gloria’s.

Here’s how we brought Noci’s Lasagna to life.
The Lasagna
Our lasagna follows the classic Lasagna alla Bolognese, made with care and simple, high-quality ingredients. Rooted in Bolognese tradition while using some of the best produce from the UK, creating a dish that brings memories to our guests.
Building the Foundation
We start with a soffritto of finely diced celery, carrot, and onion, slowly cooked in butter with bay leaf and thyme to build the base of flavour.
The Ragù
Our ragù is made using a blend of 70% Dexter beef and 30% Suffolk pork belly. The meat is browned slowly until deeply caramelised, developing depth before the soffritto is introduced.
Tomato paste and red wine are added to deglaze the pan. Once reduced, milk is added, a traditional Bolognese technique that tenderises the meat and softens acidity while adding richness. Finally, beef stock is added and the sauce is left to simmer slowly for several hours.
The Béchamel
Alongside the ragù, we prepare a classic béchamel starting with a butter roux and organic Acorn Estate milk. The sauce is infused with a bay leaf, thyme, and nutmeg, then finished with Lincolnshire Poacher cheese for added depth.
Assembling the Lasagna
The lasagna is built using fresh green pasta sheets made with spinach purée, a traditional element of Lasagna alla Bolognese that adds both colour and flavour.
Seven layers are carefully assembled, alternating pasta, ragù, béchamel, and grated Parmesan. The final layer is topped with béchamel and Parmesan before baking until golden.
